I can't believe they ate spinach for dinner.

Yesterday we had Spinach Manicotti for dinner. Everyone ate it up and even wanted more. My kids ate spinach, shocking isn't it? I told them that this is what they would eat in Italy because it was our Missionary Monday. I haven't posted much about MM since the original post here. We've been doing it for about 7 months now every Monday Night. I love getting my family to eat different types of foods. I really needed a break from the tried and true favorites and hey it's fun.

Hey there, I use fresh spinach every week in my cooking...the familia loves it.
Chicken Fettucine with spinach becomes Chicken Fettucine Florentine.
Toss some into spaghetti sauce.
Every salad has it in there too...I don't buy iceberg lettuce ever---there's very little nutritive value in it--so the fam is used to mixed greens.
They even like to eat baby spinach plain.
I used to love Popeye...maybe that's why??

Here's the recipe...
1. drive to Costco
2. find Spinach Manicotti in the refrigerater section by the pasta
3. store it in your freezer for about a month
4. go shopping in your freezer when you've got a crazy monday with kids
5. Serve on a pretty platter with garlic bread, spinach dip with chips and a fruit salad
*note to self* buy 2 instead of 1

Now that is my kind of recipe!! :-) And thanks for the idea. I eat a lot of spinach, but my family will always pass on it. I love your missionary Monday idea. We have a lot of missionaries out from our stake right now I get emails from. It would be fun to learn more about the countries they are in.

I love all of your ideas! The missionary monday meal (yum!), the conference quotes, and the family song. I need to get busy! ( Makes me tired just thinking about it all! How do you do it?)

That is great!
I sometimes just don't tell my kids what is in things and they eat it. ha ha

It is great for kids to try new stuff though and really like it!
