100 lb. quest
I'm all into motivation these days and loved this quote!
I lost another 4 lbs which really is a little surprising because I had some pie and some pasta. Two things which I shouldn't have. I didn't have an all out portion. I just had a taste. Who knew you don't have to eat it all. Oh, skinny people that's who. I would hate to be deprived of all the great tasting foods out there for the rest of my life. By the way the pie and pasta were delicious!
Also, if you are interested, my daughter did a wedding review post and the last picture is one of me (68 lbs heavier) and my husband (40 lbs heavier).

100 lb. quest
Mondays are my weigh in days. I lost 4 lbs this past week! I've decided to record my weigh ins. It keeps me accountable and actively thinking about my goals. This makes 64 lbs lost so far. I'm trying to get to 100. Some people (really just one person) thinks I'll stop before I reach my goal of 100 lbs. This really just makes me more motivated to prove her wrong.
Here's a healthy recipe I found. I'm into healthy these day. It's on my recipe blog. Just know that not all the recipes are healthy. They are mostly family favorites or ones I really like. I've tried to give credit if they're not originally mine. Enjoy!

Cinco De Mayo!
It's Cinco De Mayo today so in celebration here's a yummy recipe.
Chicken Enchiladas
1 (10.75 ounce) can cream of chicken soup
1/2 cup sour cream
1 Tbsp. margarine
1 onion, chopped
1 tsp. chili powder
2 cups chopped cooked chicken breast
1 (4 ounce) can chopped green chili, drained
8 (8 inch) flour tortillas
1 cup shredded Cheddar cheese
Preheat oven to 350 degrees. In a small bowl mix the soup and sour cream; set aside. Melt margarine in a medium saucepan over medium high heat. Add onion and chili powder, saute until tender. Stir in the chicken, chili and 2 tbsp. of the soup mixture. Cook and stir until heated through. Spread 1/2 cup of the soup mixture in a 9x13 inch baking dish. Spoon about 1/4 cup of the chicken mixture down the center of each tortilla. Roll up tortillas, and place seam-side-down in the baking dish. Spoon remaining soup mixture to top, and sprinkle with cheese. Bake 25 minutes in the preheated oven, or until bubbly and lightly browned.

I'm a winner
Look what came in the mail today. I was one of the winners from Ann at An Old Fashioned Girl. She had a whole week of giveaways. WooHoo! I even made one of the recipes all ready- Taco Lasagna. So good. Thanks a bunch Ann.

I finally found it
I have been searching for a recipe that has been requested for our Thanksgiving dinner. I turned to allrecipes.com to find it since I couldn't find my recipe but then I couldn't find the most important ingredient anywhere. Finally, I found it at Albertsons. Hooray! Here is the recipe:
Frog Eye Salad
1 cup white sugar
2 tablespoons flour
2 1/2 teaspoons salt
1 3/4 cups unsweetened pineapple juice (I use the juice from the drained cans)
2 eggs, beaten
1 tablespoon lemon juice
3 quarts water
1 tablespoon vegetable oil
1 (16 ounce) package acini di pepe pasta
3 (11 ounce) cans mandarin oranges, drained
2 (20 ounce) cans pineapple tidbits, drained
1 (20 ounce) can crushed pineapple, drained
1 (8 ounce) container frozen whipped topping, thawed
1 cup miniature marshmallows
1. In a sauce pan, combine sugar, flour, 1/2 teaspoon salt, pineapple juice and eggs. Stir and cook over medium heat until thickened. Remove from heat; add lemon juice and cool to room temperature.
2. Bring water to a boil, add oil, remaining salt and cook pasta until al dente. Rinse under cold water and drain.
3. In a large bowl, combine the pasta, egg mixture, mandarin oranges, pineapple and whipped topping. Mix well and refrigerate overnight or until chilled. Before serving add marshmallows. Toss and serve.

Food for Friday
We love breakfast foods at our house. One of our favorite restaurants is IHOP. I love to go for brunch and it just fills you up til dinner. We try to make our own big breakfasts on Saturday mornings, usually eggs and bacon (Andrew's specialty) or pancakes (Heather's specialty). In the past we have even had breakfast foods for dinner. So in celebration of breakfast foods I found a new recipe. I got it from the "Taste of Home" magazine. One of my friends where I used to live was a fabulous cook and I always asked her for recipes, she finally shared with me that she got them all from the magazine.
Oven Denver Omelet
8 eggs
1/2 cup half and half cream
1 cup (4 oz) shredded cheddar cheese
1 cup finely chopped fully cooked ham
1/4 cup finely chopped green pepper
1/4 cup finely chopped onion
In a bowl, whisk the eggs and cream until light. Stir in the cheese, ham, green pepper and onion. Pour into a greased 9-in. square baking dish. Bake at 400 for 25 minutes or until golden brown. Yield: 6 servings.

Doctors Appointments and Salad
Okay, so apparently when your 74 years old you have a lot of doctor appointments to go to. This past week I've taken my mom to 3 different appointments. And I'm here to say there is a lot of waiting going on. It really hasn't been that bad because I've gotten a lot of reading in. Can't believe that I like reading about vampires. Crazy!
Spending so much time with my mom we have been reminiscing about my favorite meals that she made growing up. One of my favorite summer salad is Pea Salad. I remember asking her when I was young, "What's for dinner?" and she told me pea salad. It sounded so gross to me that I was pleasantly surprised when it actually tasted good and I couldn't taste any peas in it. It's become one of our family favorites.

PEA SALAD
2 6oz. cans of tuna
6 hard boiled eggs, chopped
Mayo (best foods)
green onions
salt and pepper
potato sticks
handful of frozen peas
lettuce
Mix all ingredients except lettuce. Place lettuce on plate and dollop mixture on top. You can also roll inside for a yummy lettuce wrap. (The potato sticks will get soggy in leftovers. So if you know you won't finish in one meal then individually add potato sticks to plates instead of mixing with the other ingredients. )
P.S. These are potato sticks. They are basically potato chips in stick form! You find them in the chip aisle of the grocery store. I get mine at either Frys or Walmart.
